Potato Curry
Here is a simple recipe for Potato Curry. The pictures illustrate the potatoes and onions in the whole form as
well as sliced and diced for cooking. The second picture is the completed potato curry, which can be made within
half an hour. This includes preparation time.
Ingredients
- 4 medium potatoes, peeled and cut in cubes
- 5 tablespoons oil
- 1 teaspoons chili powder)
- 1 teaspoon salt (Adjust to your taste)
- 2 cups chopped onions
- 2 teaspoon coriander powder
- ½ teaspoon cumin powder
- ¼ teaspoon cumin powder
- 3 sprigs of washed and chopped Cilantro
Method
- Heat oil on a medium temperature
- Add onion; sauté for a minute. To this mixture add spices & stir
- Add the potatoes: stir with the rest of the mixture
- Lower heat, add salt & put on the lid & leave to simmer
- Stir occasionally to prevent scorching & cook for about 5min. on a lower heat
- Cook for another 12 min or until potatoes are soft
- You may add about a ¼cup water if it begins to stick to the pot
- Garnish with cilantro
