Cauliflower Au Gratin

Cauliflower is a good source of Vitamin C and fiber. The au gratin recipe is one of several ways to cook this vegetable. It may also be combined with Broccoli. I have tried to limit the amount of butter that is generally used to make cauliflower au gratin.

Basically, the cauliflower is boiled al denté, then spiced & baked with a cheese sauce. Cauliflower au gratin is a rather rich dish. A fresh salad is a good complement as it counteracts the richness effects of the cheese and butter. It is an easy to make, delicious main dish. Make it made ahead of time, freeze, then just bake when you need it.

  1. 1 medium size cauliflower,(mine was almost 22oz)
  2. 1 cup water
  3. 1 cup milk
  4. 2 tablespoons Olive oil
  5. 2 cups cheddar cheese.(I used a pre-packaged combination cheese, but generally prefer cheddar cheese)
  6. 4 tblsp. butter
  7. 3 tblsp. malt vinegar
  8. ¼ tsp. ground black pepper
  9. ¼ tsp. nutmeg
  10. 1 tsp. salt or to taste
  11. 1 stick cinnamon (optional)
  12. Breadcrumbs of 2 slices of wholewheat bread


  1. From a medium cauliflower, cut of any blemishes & separate florets. Rinse under running water. Soak in bowl of water while preparing other ingredients.
  2. Boil 1 cup water. Add cauliflower florets, salt & cinnamon stick. When the contents come to the boil,(about 3 min.) Remove from heat.
  3. Drain & save water. Keep cauliflower aside
  4. In a microwaveable container add 2 tblsp. butter to remaining hot water from cauliflower. Blend in. Add a cup of milk and microwave for 30 sec.
  5. Add 2 tablespoons of flour. Blend into milk/water mix with whisk. Microwave for a total of 2 min., at 30 sec. intervals. Each time whisk contents to prevent lumps
  6. When the mix has thickened, add & blend 1 cup cheddar cheese & 2 tblsp. malt vinegar
  7. Lay boiled cauliflower in baking dish. Add, 1 tblsp. butter, olive oil & spice with nutmeg, malt vinegar & pepper
  8. Spread cheese sauce over cauliflower. Pulse 2 slices of wholewheat bread & sprinke over the top
  9. Dot the top with the last tblsp. of butter
  10. Bake at 400° for 20 min.
  11. When cool serve portions with a green salad. Enjoy
