Cauliflower is a good source of Vitamin C and fiber. The au gratin recipe is one of several ways to cook this vegetable. It may also be combined with Broccoli. I have tried to limit the amount of butter that is generally used to make cauliflower au gratin.
Basically, the cauliflower is boiled al denté, then spiced & baked with a cheese sauce.
Cauliflower au gratin is a rather rich dish. A fresh salad is a good complement as it counteracts the richness effects of the cheese and butter. It is an easy to make, delicious main dish. Make it made ahead of time, freeze, then just bake when you need it.
